AC coupling means a capacitor is in series between the source and the next stage.  DC source voltages do not affect the output.   If the source is DC coupled, then DC source voltages affect the output.
An LDO is a linear regulator where the input /output voltage difference can be small. 
DC/DC is any type of regulator with DC input and DC output.  Vout can be higher or lower than Vin. Typically, Dc/DC is a switching regulator.
