Pros
Only Union based restaurant left in Chicago, same Union as hotels. This means full time benefits and job protection. Opportunity to make a lot of money when busy. High priced food and drink beverages quickly brings up your check averages.
Cons
High stress. On your feet for 8 hours or more with little to no breaks. Union politics. No money to be made when there is not a view (cloudy) and many out of country tourists do not tip (cultural ignorance).
