Pros
Very quality food, as well as the standards that the restaurants are run, which includes the servers they hire in the training that they receive whereas they have to know all dishes on the menu or they do not make it out of training just to be a server, let alone a bartender and the restaurant goes on a 45 minute wait every day at lunch and then two hours at night with quality clientele.
Cons
They always needed a bigger rotation with your top servers having a chance of being the lead bartender instead of just a select few because a top server will generate high ticket dining experience and a large portion of the sale is from the bar.
