Teaches a lot about discipline, hard work and cleanliness

The hours are horrendous, with ridiculously limited break time; 15mins at 11.15am and half an hour at 5pm in a 16hour day is not enough. The senior team believe in bully as a form of teaching. They seem to thrive on putting people down. The sous chefs seem to choose someone to pick on then spend the day tearing them down. Team are driven to mental breakdowns, panic attacks and fits of tears and are shown no sympathy. All the team is predominately young and inexperienced (many of them apprentices still at college) but expected to take on huge levels of responsibility with no support and then shouted at for not rising to the unachievable standard.
