Hour long dining/dinner role play. First we had to carry three plates around a table. Then do napkins. Then we had to practice clearing. Then we had a paper test asking what type of foods were from what category and how to deny someone drinks.

Interview
10 minutes, asked a lot of situational/scenario questions. Overall pleasant and nice interaction. They did not make you feel intimidated and understood if you were feeling nervous. Was asked to make a coffee.

It was a group interview that involved a practical component, but showing competence was not necessary as people who clearly had no experience were taught basic skills and everyone passed.
